1. | Melt butter in large saucepan over medium heat. | 2. | Add onion, bell pepper, garlic, and sausage. | 3. | Cook 5 minutes. | 4. | Stir in rice, chicken broth, Tabasco, tomatoes, and Cajun seasoning. | 5. | Mix well and bring to a boil. | 6. | Reduce heat, cover, and simmer for 25 minutes or until rice is tender. | 7. | Remove from heat and let sit 5 minutes before fluffing with a fork. | Yields 6 servings. |
