Jambalaya


2Tbsp.butter
1medium onion
1c.bell pepper
2clove(s)minced garlic — (about 1/2 tsp.)
1lb.Hillshire sausage
1c.rice
2c.chicken broth
3Tbsp.Tabasco green pepper sauce
1can(s)diced tomatoes
Cajun seasoning

1.Melt butter in large saucepan over medium heat.
2.Add onion, bell pepper, garlic, and sausage.
3.Cook 5 minutes.
4.Stir in rice, chicken broth, Tabasco, tomatoes, and Cajun seasoning.
5.Mix well and bring to a boil.
6.Reduce heat, cover, and simmer for 25 minutes or until rice is tender.
7.Remove from heat and let sit 5 minutes before fluffing with a fork.

Yields 6 servings.
