Cheese Gnocchi


1lb.Ricotta Cheese
1tsp.Baking Powder
2 1/4c.Flour — (approx.)
2Eggs — whipped slightly
1/4tsp.Salt

1.Mix ricotta cheese, baking powder, eggs and salt.
2.Add flour by 1/2 cups and mix until the dough stickes together in a ball and becomes firm but maleable.
3.Roll out portions of the dough into a snake about 1 inch thick.
4.Cut out 1 inch sections and roll against the tines of a fork to texturize.
5.Boil in water for about 7-10 minutes (Gnocchi should float when done).
6.Serve with your favorite pasta sauce.
